2 oz Kish EARTH Smoked Mushroom Umami Apéritif
1 oz fresh squeezed Lemon Juice
0.5 oz Simple Syrup
0.5 oz Egg White, optional

Combine all ingredients in a chilled cocktail shaker without
ice and dry-shake for about 30 seconds or until the egg
whites are aerated. If you omit the egg whites you can shake
for less time.
Next, add ice and shake again until everything is well chilled,
about another 15-20 seconds.
Strain into a chilled rocks or coupe glass and garnish with a
few drops of Angostura Bitters.
To add an option flourish, gently drag a toothpick through
the drops to create a design.
